How desi is your Chinese?- Szechwan food festival at Chin Chin

The popular Chinese restaurant, Chin Chin at The Residency Towers is known for their Indianised Chinese fare. Their ongoing ten-day Szechwan Food Festival also stays loyal to the Indian palate. “People here won’t like the taste of authentic Chinese. Therefore we use a lot of Indian spices in our dishes. We even add a bit of curry masala in the fried rice,” shares P.C Siju, the restaurant manager.

Starting off with the West lake Lamb soup (a thick soup with chunks of lamb, bits of tomatoes and egg in it), Raja Mohammed, the head chef tells us that each dish has been prepared differently from how it is usually made with main ingredients like the szechwan pepper and Hoisin sauce imported from China. The set of vegetarian and non-vegetarian starters that arrived include the luscious cottage cheese Malaysia (fried cottage cheese in tomato sauce with peanuts), chicken drum sticks and Mongolian prawns. The crispy lotus stem honey chilly tasted sweet and spicy at the same time and the succulent pieces of fiery pomfret came rich in Szechwan sauce. Sumai dim sums that came with spicy chilli sauce and salsa sauce in a steamer basket and the chicken satay that followed on a grill pot are the popular choices.

“People are familiar with Szechwan. That’s why we wanted to start our series of food festivals with it. People know what they want in a Szechwan menu,” says the chef. For the main course, one can choose from Szechwan, manchow or Malacca fried rice and roast chilli, wok-tossed or Hong Kong noodles. The darsaan noodle ice- cream is a sure hit, featuring crispy fried noodles topped with honey and vanilla ice-cream.
