There is no such thing as too much mango. The chefs at Rajdhani chain of restaurants at Banjara Hills and KPHB Colony take this line seriously and serve up more than 150 dishes made of mango this summer. Aamlicious, their carefully curated annual festival,  invariably features mangoes in every possible form – pieces, chunks, pulp, garnish, even peel in some cases – every day for their lunch and dinner thalis

Their Rajasthani-Gujarati thali is a veritable spread of over 21 varieties – from starters such as Karara Kairi Roll (a spicy fried delicacy that uses mango in its batter) to Tikhi Kairi Makai Ka Salad (made of kairi, zucchini, cucumber and sweet corn slathered with salt and chilli powder), which looks colourful and is mouth-watering and remind you of lazy afternoons during school vacations. The accompaniments for rotis also has a mango element, while the crowd’s favourite is Kachche Aam Ki Launji, thanks to its sour and spicy gravy with chunks of mangoes cooked in its own juice. However, the star of the night has to be the Aamras, the classic sweet mango pulp that goes great with hot, fluffy puris.

Corporate Chef Sugata Sengupta says, “We know our aamras is the most sought-after dish and we get it canned from Mumbai in its thickest, freshest and sweetest form from Alphonsos, in refrigerated trucks. So, regardless of where you eat at our restaurants, the consistency and taste are the same. Barring a few local mangoes, most others, including the raw ones, are A1-grade variety sourced from across the country. We are fans of the Rajapuri, Kesar and Badami variety,” he adds. A big appetite, some raucous company and time to nap post meal goes well with the Aamlicious festival, which ends on May 31.
