This Pop Up Dessert Bar is about to take the phrase ‘sweet surrender’ to a whole new level. Curated by Chef Javed Merchant, who represented the country at the World Pastry Asia Cup in 2012, expect Burnt Butter Biscuits topped with whipped lavender ganache and Textures of Caramel that range from crunch to micro sponge — at the lobby of The Park, starting today.

 
Liberal quantities of chocolate aside, the Mumbai-based patisserie connoisseur points us in the direction of one dessert that he simply calls ‘Tropical’. “It’s a combination of tropical fruits with a  moist coconut cake at the base that is sandwiched with Mango Caramel Ganache, a layer of sweet pineapple chutney, and topped with passion fruit mousseline,” he says, giving us a nuanced glimpse of what is to come.There is also a master class in store with Chef Javed who, before he set up his independent dessert space Petits Plaisirs Patisserie, had stints in the ITC Grand Maratha Sheraton, Oberoi Hotels, Mumbai and Novotel Mumbai. “From freezing to glazing to caramelisation, we’re covering it all” he promises, so get set to ace your sugar strategy, because this is going to be one sweet ride.
