Every cuisine lays stress on fresh ingredients, but Italian fare is particular about this. CGH Earth’s Casino Hotel on Willingdon Island uses this to their benefit to plan a weekend menu featuring over 12 dishes. “We’ve included two soups and risotto, in the rice dish section, three varieties of pasta and platters of tuna in the list. Not forgetting the vegetarians, we have soup and pesto recipes too,” says chef Unni Viswanath, who is set on giving us a sneak peek into the upcoming fest.

Italian spell
Popular among enthusiasts of the cuisine, the chef serves a scoglio minestrone zuppa first. “I’ve worked with many specialised chefs during my four-year stint in the Italian section of Shangri La Hotels in Central Asia. However, we’re using accented flavours to adapt it to native taste when it comes to spices like pepper,” says the chef, as I sip on the thick soup including mussels, clams and prawns, served with garlic bread. 
Reflecting his words, the tagliatelle con scoglio pasta, tossed with lemon-butter and garlic sauces, also has a peppery undertone. Risotto aragosta—prepared with short grain arborio rice—was slightly unappetising in its blend of parmesan cheese and lobster stalk. Crafted with care, their orange zest torta caprese featuring a flourless cake was an excellent choice to close the meal and the beautiful evening.
