Wish upon a star
If you’ve visited Nutmeg – The Gourmet Shop at ITC Kakatiya, you’re sure to know Chef Francis Fernandes, the man behind all the mouth-watering pastries. He also hosts the unique cake of the month program, where the team makes a new cake each month for its customers. It is interesting to know that Francis was introduced to cooking at a young age, thanks to his hoteliering family in Goa. His first memory in the kitchen is of cooking an omelette when he was five-years-old. The omelette turned out burnt, but that was just the beginning of his culinary journey. With more than eight years of experience as an ITC loyalist, the Sous Chef also customises 3D cakes for his regulars. Sharing one of his fond memories, he says, “I remember customising a chocolate platter for the former President of Russia, Dmitry Medvedev, which included one creation with his face on it. He loved it so much that he took it back with him to Russia!”
With Christmas around the corner, Chef Francis shares his recipe of Cinnamon Stars.
Almond powder 125 gm | Egg white 60 gm | Marzipan 190 gm | Sugar 80 gm
| Cinnamon powder 5 gm | Refined flour 15 gm | Icing sugar 125 gm
| Egg white (for royal icing) 38 gm
■ Soften marzipan and almond powder with the egg whites to make a paste.
■ Add all ingredients and mix them together to make a firm dough.
■ Store it in the fridge for an hour.
■ Meanwhile, whip egg whites and icing sugar to a smooth consistency for the royal icing.
■ Roll out the dough to a thickness of approximately 1 cm.
■ Spread a soft layer of royal icing on top.
■ Cut the dough with a star cutter.
■ Bake at 180°C for approximately 10-12 minutes.
