5 genius ways to turn last night's leftovers into office lunch

Atreyee Poddar

Nobody wants to eat the exact same sabzi and roti two days in a row. But before you toss last night’s leftovers or let them sit sadly in the fridge, here’s a little secret from desi kitchens everywhere: with a few smart tweaks, yesterday's dinner can become today’s most-envied lunchbox. Here are five delicious upgrades that’ll have your colleagues asking where you ordered from.

Dal-rice cutlet

Mash up leftover dal with some rice, bind it with a spoon of besan or bread crumbs, shape into small patties, and pan-fry until golden and crisp on the outside. Pack it with a dollop of chutney or ketchup on the side.

Sabzi paratha roll

Stuff a generous spoonful of dry sabzis like aloo, gobi, or mixed veg into a leftover paratha or roti, roll it up tightly, and tuck in a lemon wedge and a bit of pickle on the side.

Curd rice

Mix leftover rice with curd and a pinch of salt, then finish with a quick tadka of mustard seeds, curry leaves, and green chili. The best part? It doesn't even need reheating.

Curry frankie

Got extra paneer curry, or egg curry hanging around? Mash it down slightly so it's less saucy, then roll it into a frankie with sliced onions and a good squeeze of lime. Wrap it tightly in foil to avoid any lunch-bag disasters.

Rajma-chole toast

Mash leftover rajma or chole slightly, spread it on buttered, toasted bread, and top with chopped onions and fresh coriander. It's quick, comforting, and honestly might become a regular request.
