Prepare the filling
In a pan over medium flame, add freshly grated coconut and fragrant jaggery, and sauté until mixed. Add finely powdered cardamom and nutmeg to the mixture and cook until thickened and glossy. Let it cool down.
Knead the dough
Boil water with a pinch of salt and a spoonful of ghee. Stir in fine rice flour, cover, and let it steam off the heat. Knead the warm mixture into a soft, smooth dough.
Shape and fill the dumplings
Apply oil on your hands, press the small round piece of dough into a round, thin shape, and form beautiful folds along its edges in a gentle way. Fill the inside with a spoonful of coconut filling and bring the edges upwards for the shape of Ukadiche Modak.
Steam to perfection
Put the shaped dumplings on a damp muslin cloth in the steamer. Steam them for ten to twelve minutes on medium heat until they are properly cooked with a translucent and shiny outer coating that is not sticky.
Serve with hot ghee
Take out the Ukadiche Modak from the steamer with great care. Pour some warm melted ghee over them, and serve right away to experience this wonderful homemade dessert at its very best.
