Sometimes, one comes across a condiment so good that even dunking a pair of soggy socks in it would result in a great meal. I experienced this while dipping everything I found at The Square’s buffet spread—counting desserts like darsaan, fried wonton noodles drizzled with honey—in their spicy peanut sauce.

The multi-cuisine diner within Novotel Kochi Infopark restaurant is currently hosting The Great Oriental Thattukada; a humble attempt by executive chef G V Ramesh’s culinary squad at showcasing uncommon fare found along the curb in countries like Myanmar, South Korea, Mongolia, Singapore, Indonesia, and more.

“Besides maintaining our regular daily buffet spread as it is, we’ll be making almost everything in-house including French baguettes for our bánh mi) and changing up the festival’s menu options every night,” states chef Ramesh, pouring me a bowl of their Burmese sea food soup which comprised of a lightly salted broth with chunks of crab meat and prawns.

In my haste to sample dishes from their live stations—which vary from rice rolls, Teppanyaki, steamed dim sum, Hanoi bun cha (delectably-grilled pork dumplings), faux sushi, and more—I disregarded etiquette and gorged on their mains first. If you’re wondering what to munch on while waiting for the live station chefs to prepare your order, I recommend placing spoonfuls of their piquant peanut-pineapple salad and pickled cucumbers on prawn crackers. Instant umami bomb.

Fortunately, my wok-tossed noodles infused with flavoursome onion oil arrives quickly. Though slightly dry, it works well with classics like beef rendang and ayam percik: a Malaysian roasted chicken dish which comes coated with a creamy-yet-spiced coconut milk gravy. Still have space to try desserts? Stay guilt-free and indulge in their pistachio-topped coconut sago pudding.

Till November 30.
From 7 pm to 11 pm.
