Scotch expert Ervin Trykowski on  global trends and single malt becoming more inclusive

HAILING from Scotland, it’s no surprise that Ervin Trykowski has been working in the whisky industry  or over a decade. Popular as @scotch.boy on Instagram, this 31-year-old is Diageo’s Scotch whisky ambassador and launches their new single malt, the Singleton of Glendullan 12YO in India. He shares his insights on the new addition, the evolution on single malt, and Scotch cocktails.

Tell us about the Singleton of Glendullan 12YO.
The Singleton of Glendullan is produced in Dufftown in the highlands of Scotland. Dufftown is renowned for producing light and sweet Scotch. The Glendullan has notes of cut grass and spiced sweets, along with fresh fruit and apple.

You’ve worked extensively with cocktail bars. What are your thoughts on single malt cocktails? 
Previously, other spirits have had more success on a cocktail menu, but now, we are seeing single malt 
on some of the best menus. It has an unparalleled flavour palate — no other spirit can offer the same range of tastes, textures and flavours; so why not put that into a cocktail and make something amazing? I do talks called “Single malts in cocktails, why not?” to educate people on how versatile Scotch is!

What are some cocktails that work well with single malts?
I enjoy the Singleton in a Highball with soda. There is a single malt for every cocktail and occasion; Lagavulin with Coke is a head turner, Talisker in a Piña Colada is a perfect holiday drink and Singleton in a Whisky Sour, it just works!
 
What are some global cocktail trends right now?
Sustainability is key and people are getting more and more innovative with how to apply it and make it work in bars. This goes from the distilleries to the glass. We use lots of sustainable practices in our whisky production. 
 
How has single malt evolved over the years and what is its future? 
Single malt in the future will be enjoyed by everyone who likes to explore flavour. They will not be 
told how not to enjoy whisky but be offered suggestions. It will become more democratised, less exclusive and more inclusive.
