How Samudra in Trident Chennai is exploring coastal flavours in South India through its newest menu

From a comforting Murungakai Thakali Saru soup to even a Vegetable Caldin with sannas from Goa, the meal has popular dishes from many communities.

If you're craving an authentic South Indian meal, Trident’s new set menu at Samudra is exploring different flavours of the region with coastal specials. The five-course treat, which is available with vegetarian and non-vegetarian options, has a variety of seafood, chicken and lamb dish options. From a comforting Murungakai Thakali Saru soup to even a Vegetable Caldin with sannas from Goa, the meal has popular dishes from many communities. 

We start with the humble Vazhaipoo (banana flower) vadai which is served with a delicious coconut chutney and a chilled glass of mor (buttermilk). The popular Tamil snack is crunchy and irresistible when dabbed with the chilli chutney. Anticipating the impending summer showers in the city, Chettinad Kozhi Rasam which comes next is comforting with every spoon we take. “Unlike the Chennai rasam which has a lot of tomatoes, this uses the Chettinad masala mix and chicken broth,” Executive Chef Indranil Nag tells us as we enjoy the swirling the bits of chicken, which has a hint of cardamom and cinnamon. However, it is the seafood platter which completely steals the show for us. The platter has all kinds of colour — from the classic red Andhra-style Pepper Fried Prawns to the spicy Tamil Nadu favourite of Fish Varuval and even Goa-inspired semolina-crusted calamari, making it quite a tour of South India on a plate for us.

A gastronomical trip of the region is incomplete without a tribute to Kerala, and the main course does just that. The classic Prawn Moilee from Kerala is a feast in itself. While sautéed prawns are served with a drizzle of the creamy coconut milk-based curry, a bowlful of it is also served with soft fluffy appams, for those who like it the traditional way. It can be savoured with a bowl of beans thoran, which is simply fresh and sweet. We end our meal with not one, but two different desserts. While the first is a delicious glass of Elaneer Payasam, the other is a fragrant Rosapoo Halwa which leaves us spellbound. Using  Rose gulkand (rose petal preserve) as their natural sweetener, it is mildly sweet and just the way we like it.  

Meal for two is Rs 1,295 plus taxes onwards.
