The newest pasta bar in town, Pasta de Indifused, serves up some of the best Indo-Italian comfort food

As you walk past the bustling NSR Road, you would never notice the cosy little pasta bar, Pasta de Indifused, if not for its colourful signboard that beckons you to come in for the ultimate comfort food experience.

Inaugurated a couple of weeks ago, the pasta bar serves vegetarian pasta dishes apart from staples like burgers and sandwiches. I A Sanjay, who owns Pasta de Indifused along with six other food franchises —London Shakes, Belgian Waffles and Twisting Scoops—in the city says that people love to experiment with different types of cuisine and this inspired him to open a dedicated pasta bar in Coimbatore. “There are many places that serve pasta as part of an extensive menu and generally the non-vegetarian options look more appealing than the vegetarian ones. To fix this, I decided to open an eatery that serves a variety of vegetarian pasta,” he says.


Say cheese
For starters, we are served the cheese poppers which are perfectly browned on the outside and oozing cheese, inside. The dish is served with some fresh coleslaw, adding a nice crunch to the gooey minibite. Next up, we try the classic American corn and spinach sandwich that resembled grilled bread pockets stuffed with boiled corn and spinach coated with stringy mozzarella. All the starters are served with a side of fresh salad or slaw which makes it a meal by itself.

Meet the sauces
Quickly moving on to the main course, we are spoilt for choice with options like a tangy herb, corn twist penne, creamy white sauce and such. We follow Sanjay’s recommendation and try the creamy broccoli cheese pasta. All in the perfect proportions, this dish is just the right amount of pasta in white sauce garnished with chunks of crunchy broccoli florets. The sauce was mild and comforting. We also sampled the fusion pasta which is penne served in a spicy red sauce with colourful cubes of stir-fried capsicum and grated cheese. This is a perfect option for those who like a slightly Indian curry flavoured twist.

Sweet infusions
For those who like to try the staples when out for a meal, the café also serves some delicious burgers. Our recommendation: Don’t give the spicy paneer burger a miss. A huge slab of cottage cheese coated with a spice rub that is served in soft burger buns in a bed of crunchy lettuce and tomatoes paired together with an in-house dressing, is the perfect meal. 


To wash down the heavy meal, the café serves fresh minty mojitos and for one’s that need a bit of a sweet fix, the milkshakes in Oreo, Ferrero Rocher and Kitkat flavours are a must.
