Chef Sajeesh shares his secret mojo sauce recipe, a must for all Cuban food

Great flavours and tempting visuals make for a lasting impression. Executive chef Sajeesh Balan would vouch for this. After all, the Street Food Festival at Zone By The Park’s Bazaar is a culmination of all the street food shows he has watched and years of research spent on understanding the taste of South American cuisine. “There’s something soulful about the cuisine of the Americas. I think that the rustic and uncomplicated nature of its food is best showcased through a food truck. Let’s admit it, we have all watched those movies and TV shows and wondered what the experience is like,” he says with a laugh. 
While offering favourites like chorpan and tacos to churros and empanadas at the festival, Chef Sajeesh parts with the recipe for his secret Mojo Sauce, a Cuban savoury staple, as part of his special Mojo Chicken burger. 

 

Ingredients:
Chicken (mince) - 500 gm | Olive Oil - 1/4 cup | Oregano - 1 tbsp | Garlic - 10 cloves, chopped finely | Red Chilli Flakes - 1 tbsp | Lemon Juice -  4 tbsp | Lime zest - 1 lime | Orange Juice - 3/4 cup | Cumin Powder - 1 tbsp | Pepper - 2 tsp| Salt to taste

Topping:
Lettuce | Light mayonnaise - 1/4 cup | Lime juice - 1 tsp | lime zest 1/2 tsp | Pepper - 1/4 tsp | Salt to taste

Method:
• In a blender combine orange juice, oregano, olive oil, garlic, lime juice, zest, cumin, salt, pepper and red chilli flakes. Process until completely blended.
• Pour marinade over chicken mince. Mix well. Refrigerate for 2-6 hours.
• In a small bowl, combine mayonnaise, lime juice and zest. Cover and refrigerate.
• Make chicken patties and using direct heat cooking method grill the patties over medium heat until done.
• While chicken is grilling, slice bun horizontally. Lightly brush each half with 1/2 tablespoon butter and place on grill until lightly toasted.

To Assemble:
• Place chicken patty on top of toasted bun along with some lettuce. 
• Top with a slice of cheese and remaining bun. 
• Serve immediately with mayonnaise dipping sauce.
