It's a Romaine holiday! Here's some inspiration for some low cal feasting this festive season 

Executive chef Sumeet Sood of Taj Club House believes that  breakfast is the most important meal of the day and also that food needs to be fresh and authentic. This mindset, although a healthy one, doesn’t mean that flavours take a backseat by any means — certainly not going by the long list of dignitaries he has cooked for, including the likes of Bill Gates! When we asked him, what made him pick this Crispy Romaine Quinoa Salad to share with us, as a healthy option for this particularly indulgent time of year, he offered with a smile, “Green and red are the colours of this festive season. Getting them into food to lighten the air is heartwarming.”

CRISPY ROMAINE, QUINOA SALAD WITH LEMON CILANTRO CONCOCTION

INGREDIENTS
Romaine lettuce 100 gms | Organic quinoa  75 gms | Kalamata olives 10 | Fresh cilantro leaves 1 small bunch | Lemons  2 | Extra virgin Olive oil 25ml | Parsley 15 gms | Himalayan Pink salt to taste  | Cayenne pepper 5 gms


METHOD
• Clean and wash the romaine leaves and soak in ice cold water for 10 minutes and drain.
• In a pan, add water and boil the quinoa for 10 minutes, strain and cool.
• In a mixer, add the clean cilantro leaves, juice of 2 lime, salt and pepper and blend at high speed for 25 seconds and set aside. 
• In a presentation plate, assemble the lettuce, sprinkle the quinoa and drizzle the dressing and serve with kalamata olives, and freshly chopped parsley.

Tip:  

If you are in a hurry and want to whip up something healthy, then you can boil the quinoa, else to extract more nutrients, soak the quinoa overnight and use it in the salad.

Tips to stay healthy during the festive season

 
• Drink a glass of water before your meal and eat until you are 80 per cent full.

• Choose a good mix between your protein, carbs and sweets.


•  Eat happily! The best way to keep the weight off and be healthy is when you eat happily and are around 
loved ones.
