Pour some kombucha on me? Chennai's Kombu Chai offers some delicious artisanal brews

This kombucha isn't just good for you — it’s delicious. Flavours that are home brewed over anywhere between 10 and 14 days are subtle and understated as opposed to overpowering variants you might have tried in the past, make it easy to sip on through the day. And it arrives at your doorstep in beautiful floral packaging pretty enough for a Christmas present in 500 ml eco-friendly glass bottles.
Twenty-six-year-old Aditya Mathai of Kombu Chai started selling his home brewed kombucha made out of his kitchen in Kotturpuram only a couple of months ago  — with operations running entirely off Instagram. And between social media shares and word of mouth and word of mouth — his distribution he tells us “has gone from two or three litres a month back to family and friends to 60 litres every 10 days!” A number Aditya did not anticipate until his fiancé who hails from Bengaluru gave it a taste and encouraged him to make it a public venture.

What’s your flavour?
Look out for three flavours currently — Original, Ginger and our personal favourite Nutmeg that are standard. Although, Aditya who is completely self taught with his brewing experiments (although the original recipe is his dad’s) is now looking at seasonal fruity flavours as well like strawberry, pineapple and mango. 

Mix it up
Best had chilled and before a meal for better digestion, we like the fact that given this brewer is in his mid twenties, he doesn’t only harp on its health benefits but weaves the probiotic drink into fun social settings as well. “We swapped out sugar-y juices for kombucha at a Diwali party,” he shares. And when we ask him if he has ever tried pairing kombucha and alcohol, the answer is a surprise yes. “Our ginger flavour pairs well with beer and the result tastes like a nice shandy, friends have also tried our Original with whiskey and a cocktail concoction of vodka and lime that turned out great!”
