ITC Chef shares wholesome breakfast recipe for Ugadi festival

Ugadi marks the New Year as per the Hindu calendar and ITC Chef Manisha Bhasin has shared breakfast recipe to kickstart this festival

To start your festival with a fulfilling meal, you can make with some Pearl Millet (Bajra) and Jaggery Pancakes

What you need: ½ cup Bajra flour, 4 tbsp toasted sunflower seeds, 1 ½ cup whole wheat flour, ¼ cup ragi flour, ½ cup refined flour, 4 tbsp boiled broken wheat, 2 ½ tsp baking powder

What you need: 1 tsp jaggery powder, 2 whole eggs, 2 tbsp melted butter, 1 ½ cup milk and 4 tbsp curd

In a bowl, mix all the ingredients together except for the melted butter. Use the melted butter only when you are making the batter smooth to prep for the pancakes. To adjust the consistency, you can even add some milk if required

Heat the griddle to medium heat by pouring some butter. Using a ladle, pour the batter onto the griddle. Worry less about the form and cook until your pancakes are golden brown

Finish off by pouring some honey, passion fruit jam or maple syrup on your pancakes
