The summer menu at The Open Box brings delectable salads and cocktails

While the intermittent showers may have given us some respite, summer is still very much in, so the summer menu at the Open Box comes at the right time. Executive chef Shaikh Mohammed curated a special menu of salads, cocktails and mocktails, and we got a sneak peek.


The drinks menu is divided into beer cocktails and summer cooler mocktails. The beer cocktails have options such as Stout It Out, a concoction of beer, espresso and lime juice, Fizzy Monk, a heady mix of beer and Old Monk rum, and the Real Ice Age, beer and vodka. We had the Summer Hoedown — beer, gin and ginger lime juice. We also opted for Aam Ka Panna from the mocktails section. The classic drink is served with soda and lime. Other options are Pineapple ginger sparkler, Masala Sprite and Masala Chaas.


Dressed up
The salad menu has a rainbow of salads with light, creamy and spicy options — something for everyone. We started with the Thai cucumber salad. The simple dish had sliced cucumber tossed with spices and finished with coriander — the dressing made it an instant favourite. As for the Watermelon, feta and mint salad, the crumbly feta is what won us over. 


Try the Watermelon and pineapple salad with a honey dressing if you like a bit of sugar. The next dish, Beetroot and feta, brought a dash of colour to the table. Even if you are not a fan of the pink vegetable, give this a shot for the citrusy dressing. For more of a substantial protein kick, we recommend the Chickpea and avocado salad, served with green onions, cilantro, feta and lime juice. The last salad on the list was the Mexican street corn salad. Corn, black beans, and avocado with a parsley dressing — creamy and satisfying.


The festival makes a case for delicious and interesting salads, that also happen to be healthy.
