The name, Between the Buns, might sound a bit indelicate, but we assure you, at Toast & Tonic, it’s strictly the literal meaning that is being referred to. The promotion, which kicked off yesterday, lays  emphasis on local flavours served up sandwiched between gourmet, homemade burger buns. Helmed by sous chef, Chirag Makwana, the menu includes a line-up of nine different burgers, including an option for vegans. We start our tasting with the Lamb Burger. Slightly crisp on the outside, the patty is paired with a harissa spread, balsamic onions, sesame garlic and mint yogurt, and is served with a brioche bun. The melding of different textures and contrasting flavours make this one a hit.

 Vegetarians may opt for Shrooms, made with pulled oyster mushrooms, button mushrooms, mushroom chips, tomato chilli spread, brie, cucumber and radish slaw. This is served in a ciabatta bun. The earthy mushrooms and brie are given some depth with the tangy and fiery tomato chilli spread, which is just perfect. The Standard, really does raise the bar, with a smoky, chargrilled beef patty topped with broccoli fondue and Bangalore ham. The sesame bun it comes in adds some nutty notes to a burger that by itself is umami, which is not necessarily a bad thing. 

The North-Eastern Star, a dish inspired by the chef’s visit to Meghalaya. The filling is a Khasi style preparation comprising black pork cubes, bamboo shoot, perilla seeds and purple cabbage slaw. Fans of seafood must try the Soft Shell Crab Burger — batter fried crab with avocado crema, lemon aioli and sofrito in a  herbed bun. This one proved to be light and refreshing and ideal for when you want something to beat the heat and your hunger pangs. 


Other options include the Fish Burger, crispy Snapper with som tam, jalapeno cream and tartare, and Chicken Burger, rice flake-crusted chicken fillet, pickled roasted bell peppers, Sriracha 
aioli and iceberg lettuce. The Vegan Burger is an interesting choice, that brings together  black rice (sourced from Coorg), tofu, pickled leeks, radish, tomato aioli and lettuce in a multi-grain bun. The burgers are accompanied with a choice of fries, which makes things all the more exciting. Diners can choose between sweet potato fries, potato wedges, tapioca chips and shoestring fries. Whether you’re a burger aficionado or just looking for a plate of good food, this promotion is sure to keep you happy.
