Marriott on Wheels focusses on our signature dishes from local cuisine
The Chef movie depicting an experienced kitchen hand losing his job and starting a food truck captured the zeal of every millennial foodie. So much so that that it was remade into Hindi in the same name. Now, Marriott International Inc. is converting this idea of a food truck travelling across cities into a reality.
Painted in an orange shade, Marriott on Wheels is set to traverse 6,761 kilometers, covering six cities in 40 days! The event aims to showcase the diversity of F&B departments of their Select Serve Brands including Four Points by Sheraton, Courtyard by Marriott, Fairfield by Marriott, and Aloft Hotels.
Arriving in Kochi on May 4, the vehicle will serve specials at three locations till May 6—at Four Points by Sheraton Kochi Infopark, near Infopark, and Lulu Mall.
We reached out to executive chef Saurabh Singh who is curating the menu for the truck’s visit to the city. “Marriott on Wheels focusses on our signature dishes from local cuisine which will be best enjoyed by the crowd. There is a limited menu, mostly designed to be picked as a combo,” says Saurabh, who has over 15 years of experience in Indian cuisine.
Be sure to hit the locations where the vehicle is parked to grab some kappa puzhukku (tapioca) with meen moleshan (toddy shop style fish curry) or kallappam (rice pancakes) with vegetable kuruma. If you want a little Malabar touch, try their pathiri with kozhi parlan (chicken roast) and wash it down with an aval milk (rice flakes shake). “For the convenience of roadside dining, all the dishes will be dry rather than in a gravy form,” informs the chef.
