This Bengaluru patisserie offers cakes size wise and not as per weight, here's why!

A Cocoa Profiterole sits alongside a Lemon Meringue Profiterole. Both of these are from a collection of seven different profiteroles that are perfect for a true dessert lover. These variants are all displayed along with breads, cookies, cupcakes, tea cakes, brownies and buns at the newly opened Lagom Patisserie on Spencer Road in Frazer Town.



The balancing act
Launched by Tazeen Kapadia and Saad Siraj, Lagom Patisserie used to take occasional orders via Instagram for birthday and wedding cakes. But when the orders increased and a few cafes in the city started sourcing their creations, the couple felt it was the right time to go offline and open a patisserie.

Talking about how her journey with baking started, Tazeen says, “The reason we chose the name Lagom (a Swedish word that means ‘just the right amount’) was because as I got deeper into baking, I realised it’s more like science. And because I was a science student, it was something that excited me. Lagom is not just another word, it’s a feeling, an idea and a way of life.” While Saad has been in the food industry for many years, Tazeen graduated with a diploma in pastry art from Le Cordon Bleu London in 2014. Since then, the couple has been pursuing their passion which has materialised into this bakery.



Size wise
What’s interesting is that the patisserie offers cakes by inches and not weight, as it is more accurate. “Some cakes are more fluffy while others are dense. The weight changes. But it doesn’t mean that equal number of pieces can’t be served,” explains Tazeen. At Lagom, the couple was clear they wouldn’t compomise on the flavours to get the weight right. Apart from cakes on order, the must-trys from the menu are the Dark Chocolate Babka (a Jewish doubled-twisted bread filled with chocolate and chocolate chunks) and the Japanese Milk Bread.



“This bread is made with pure honey and we use the Japanese technique of cooking part of the flour with water that is then added to the actual batter. This makes the bread all the more fluffy,” offers Tazeen. Among other things, Lagom also offers gluten-free Brownie Cookies aka Brookies.
