Make the most of this monsoon with the two simple yet heart warming recipies when it rains next. While one is a bowlful of warmth, the other is a crispy delight that will satiate your hunger pangs when the weather god plays around.
Chicken Spring Roll
1 tbsp oil | 2 tsp finely chopped garlic | 1 tsp finely chopped ginger | 1/2 cup sliced onions |1/2 cup sliced capsicum |1 cup thickly grated carrot |1 cup shredded cabbage |100gm boiled & shredded chicken | 1 teaspoon chilli paste |Light soya sauce 1 teaspoon |1 tsp tomato ketchup |Salt to taste |Pepper |Spring roll wrappers
Heat oil in a pan and add the ginger and garlic. Sauté for a while. Add onions and sauté. Add the shredded vegetables and chicken and suate for about 3-4 mins. Add soy sauce, tomato ketchup, salt, pepper and chilli paste and mix well. Remove from heat. Lay out the spring roll wrappers on a clean and dry surface and fill with a portion of the stuffing. Brush the sides of the wrapper with cornstarch slurry and roll the wrapper and seal the edges completely. Heat oil in a non stick pan and deep fry the rolls till golden brown. Drain on absorbent paper and cut each roll diagonally. Serve Hot.
Chicken Manchow soup
Cube fried boiled Chicken (30 gms) |Chopped vegetables (30 gms )-cabbage carrot, beans, tomato |cube shiitake mushroom |1 tablespoon egg drop |stock water |corn flour |vinegar |ginger | green chilli chop |coriander leaf |noodles
Heat oil in a pan and add chopped ginger and chilli. Sauté for a while. Add salt, pepper. Add one teaspoon dark soya. Add stock water. Add corn flour and boil. Wait for the mixture to become thick. Add egg drop and stir well. Add chicken and vegetables. Add coriander leaf. Add 1 teaspoon vinegar. Garnish with crispy fried noodles.
