Gud​‍​‌‍​‍‌​‍​‌‍​‍‌ Panjiri is a classic winter delight originating from the northern part of India that you will mostly find in the Punjabi kitchens. It is a crumbly, nutrient-dense mixture prepared using whole wheat flour, ghee (clarified butter), jaggery (gud), nuts, seeds, edible gum (gond), and warming spices such as dry ginger and cardamom.

It is a tradition-bound mixture loaded with nutrients and made of atta (whole wheat flour), ghee, jaggery (gud), nuts, seeds, gond (edible gum), and spices like dry ginger and cardamom. The recipe is primarily known in Punjabi homes. A family usually makes a large quantity of Gud Panjiri in the winter and eats a small amount every day, either by itself, as a ball (ladoo), or with warm milk.

The word Panjiri refers to its coarse, grainy texture, while the use of jaggery instead of refined sugar gives it the name Gud Panjiri. Unlike modern energy supplements, it is rooted in seasonal dietary wisdom designed to help the body adapt to cold weather.
