Srini and Lien Uppaluri of 'Zza Bar open up about introducing authentic Italian pizzas in Hyderabad

It wouldn’t be too much to say that ’Zza Bar was one of the first outlets that served only Neapolitan-style pizzas, which went on to become a trend in the city. Opened in January, the café’s first branch in Road No 45 became a favourite among food enthusiasts, not just for their handmade pizzas but delicious desserts as well.

Founders and power couple, Srini and Lien Uppaluri, tell us that it’s their commitment to serving authentic Italian pizzas that has worked for them. Even before they started the outlet in Hyderabad, the couple owned a branch in Manipal, which is now their first franchise. “After our stint in Manipal, we were keen on opening ’Zza Bar in Hyderabad, especially when we noticed that there was a dearth of authentic pizza place,” says Srini.

 Since their launch in the city, the couple has established ’Zza Bar as the go-to pizzeria even with a menu comprising only vegetarian options. While their first menu is just as popular, the café now has a new branch tucked away in Syala 95A in Jubilee Hills, catering to the meat lovers. Seated in their latest outlet, we observe that the décor is pretty much the same — a tiny but beautiful space with wooden furniture. Although the pizzas are made in the Il Forno oven created by New Delhi-based oven maker, Marco Cappiotti, this branch has it fitted in a huge food truck that they drive around the city for events. “Unlike Road No 45, we make Roman-style pizzas here that are stiffer and less hydrated. These are also easier for delivery orders, which have been increasing lately,” Srini adds.

The menu offers half a dozen options comprising variants in meat. We opt for the Pesto Chicken and the Chicken Pepperoni pizzas. Made in-house, the base is thinner than their regular ones with a fine layer of tomato sauce. While the former has a strong taste of basil and cheese with succulent chicken toppings, the chicken pepperoni is on the tangier side with a hint of spice. We also recommend the Mutton Keema and the Chicken 65 — inspired by the local taste palate.
