Mango Basil Cheese Cake by Chef Khemraj Bhatt, Kenilworth Hotel
When the Greek delight meets the king of fruits, the combination is heavenly.
Ingredients:
Cream Cheese 1000gms
Castor Sugar 1000gms
Egg 1
Vanilla Essence 1000ml
Fresh Cream 1000ml
Fresh Mango Pulp 1000gms
Digestive Biscuit 1000gms
Basil 1000gms
Butter 1000gms
Method:
Crush the digestive biscuit and mix with butter, make a base, keep in fridge to set. Mix the cream cheese and castor sugar add egg one by one add vanilla essence, make smooth mixture of it. Add fresh cream and whipped it nicely. Add mango pulp and chop basil, mix gently. Place the mixture on top of the set base of digestive biscuit crumb. Bake at a temperature of 160 degree celsius for 45 minutes in double boiler. Keep it in a chiller and serve cold.
