Popular vegetarian diner Café 4/1, is known for always bringing something new and exciting to the table. Famous for its Indian platters, the eatery has added Asian dishes to its menu and has come up with the Noodles Festival to celebrate the city’s love for chow mein. “Asian cuisines are currently trending in Kolkata. We have tried to replicate global cuisines with vegetarian as the focus. And it’s great to have a noodles festival before the winter chill disappears. Steaming noodle bowls packed with Asian flavours, fresh veggies and aromatic curries is what we offer to our patrons,” says Bhavika Surana Bhuwalka, owner of Café 4/1.
Here’s what we loved at the ongoing festival:
Udon Noodles
Udon, a thick wheat flour noodle used frequently in Japanese cuisine, was cooked to perfection. Kakejiru, a mildly flavoured broth made of Miso paste (made from fermented soy beans), soy sauce, and mirin – a subtly sweet and slightly sour rice wine -- was wholesome and flavourful.
Chia Bhutanese Soba Noodles
Buckwheat, a traditionally a nutritious staple food of the Bumthang region in Bhutan, is one of the main ingredients for cooking Chia Bhutanese Soba Noodles with scallions. The original recipe has been adapted to local taste by adding some vegetables to it, turning it into a complete meal. It has a touch of coconut milk and the green beans, bell peppers, peas or corn make it toothsome.
Stir Fry Exotic Japanese Noodles
Tossed with fresh crunchy vegetables, this dish made with Teriyaki sauce is irresistibly good.
Hosh Posh Noodles
Here Ramen Noodles is used with a lot of veggies and fresh herbs and leaf, topped with a secret sauce.
